The Garde Manger Chef is a coveted junior-level culinary position within our boutique hotel organization, and is primarily responsible for the preparation and plating and serving of our delicious small plates menu for our rooftop restaurant and bar, The View. This position reports directly to our Director of Culinary and/or Sous Chef. Additional duties include assisting the Director of Culinary and Sous Chef in preparing and plating menu items for Banquets and other Food & Beverage functions as needed.

No hot kitchen, no cramped quarters, and no high stress environment... This position works atop The View in our clean and efficient open-air prep kitchen alongside the service team with amazing views of Camden Harbor and Penobscot Bay. Teamwork, great service and great food are our focus!

If you are in need of seasonal housing, the full-time Garde Manger position offers the availability of an efficiency cottage on the ocean in Rockport, Maine, just a few miles from our hotels in Camden at a reduced, subsidized monthly rental rate. Candidates must have their own, reliable transportation to get to and from work each day. The cottage is furnished with a small kitchenette, full-size bed and bathroom with shower stall, sink and toilet. The cottage location is off of Route 1 in Rockport, conveniently located between the towns of Camden and Rockland, close to local grocery stores and other shopping.

Responsibilities and essential job functions include, but are not limited to:

  • Assist in preparing food items for The View, ensuring the plating station is well stocked for each service;
  • Ensure cleanliness of the plating station and dish areas;
  • Ensuring that the kitchen operation procedures and hygiene meet food safety standards and regulations, keeping an eye on food quality and freshness, ensuring consistent FIFO procedures are followed;
  • Heat and plate all food items, with proper garnishes and portions;
  • Notify the Sous Chef or Director of Dining when items need to be ordered, including food items and tools;
  • Make a nightly prep list of items that need to be restocked for the next day’s service;
  • Assist in banquet prep & service;
  • Washing and cleaning the kitchen. plates, utensils, and cooking wares and storing the equipment during and at the end of service;


  • Minimum 1-year experience working in food service or culinary environment;
  • Serv-Safe Certification preferred but not required;
  • Excellent communication and organizational skills;
  • Ability to work cohesively with fellow colleagues as part of a team;
